This qualification is part of the Tourism, Travel and Hospitality Training Package. It reflects the role of highly skilled senior managers who use a broad range of hospitality skills combined with specialised managerial skills and substantial knowledge of industry to coordinate hospitality operations. They operate with significant autonomy and are responsible for making strategic business management decisions. It provides a pathway to work in any hospitality industry sector for a diversity of employers including restaurants, hotels, motels, catering operations, clubs, pubs, cafes, and coffee shops. It allows for multi-skilling and specialisation in accommodation services, cookery, food and beverage and gaming.

AVTES helps hospitality businesses to improve the skills and confidence of their staff with high quality on-the-job training. They are known for their expert trainers and high standards. They deliver qualifications from Certificate III to Advanced Diploma level in hospitality, cookery, and management. They are most famous for pioneering the on-the-job cookery apprenticeship back in the 1990's. They also assist businesses to meet legislative requirements with accredited short courses. Funded training is available through traineeships, apprenticeships, and the Victorian Training Guarantee. Full fee paying training is also available.
