Core: Apply hygiene and sanitation practices; Overview the meat industry; Identify species and meat cuts; Trim meat for further processing; Select, weigh and package meat for sale; Sharpen knives; Store meat product; plus more. Electives: Make and sell sausages; Provide advice on cooking and storage of meat products; Prepare and operate bandsaw; Comply with Quality Assurance and HACCP requirements; Break and cut product using a bandsaw; Prepare and slice meat cuts; plus more.
