Certificate III in Retail Baking - Combined

This qualification is part of the Food Processing Training Package. It covers the retail baking - cake and pastry and bread specialisations within the food processing industry. It provides trade baking skills and knowledge for those working in a retail baking environment with a focus on cakes and pastry and bread.

Entry Requirements:

Completion of Year 10 with an average level of 3.5 or C grades in each of four learning areas or equivalent

20 units: 17 core; 3 elective

Core: Implement the food safety program and procedures; Form and fill pastry products; Produce pastry; Produce bread dough; Bake sponges, cakes and cookies; Bake pastry products; plus more. Electives: Prepare food products using basic cooking methods; Plan and schedule production for retail bakery; Deliver and monitor a service to customers; Store, handle and use frozen dough; plus more.
