Certificate III in Catering Operations

This qualification is part of the Tourism, Travel and Hospitality Training Package. It reflects the role of individuals working in catering operations who use a range of cookery skills and sound knowledge of kitchen operations to prepare food items. It provides a pathway to work in various catering settings, such as hospitals and aged care facilities, sporting and entertainment venues, hotel banqueting departments, cook-chill production kitchens, and mobile catering businesses of varying size.

Entry Requirements:

Students must be employed as an apprentice and have a signed Registered Training Contract.


21 units: 12 core; 9 elective

Core: Use food preparation equipment; Prepare and present simple dishes; Prepare dishes using basic methods of cookery; Clean kitchen premises and equipment; Show social and cultural sensitivity; Use hygienic practices for food safety; plus more. Elective: Prepare and present sandwiches; Package prepared foodstuffs; Prepare appetisers and salads; Prepare stocks, sauces and soups; plus more.
