This qualification is part of the Australian Meat Processing Training Package. It covers work activities undertaken by workers commencing work in meat enterprises which undertake specialised services, such as preparing shelf ready retail products, meat wholesalers, specialty meat cuts, gourmet meat, bulk value-added products, and providing meat preparation customer service. Specialisations include: Abattoirs; Meat retailing; Smallgoods; Meat processing, and Food processing.

Established in 1998, Food Safety Operations (QLD) Pty Limited trading as FS Alliance is a Registered Training Organisation predominant in the meat processing industry along the eastern coast of Australia. They are registered to deliver training throughout Australia. In 2015, FSOQ purchased the training division of Symbio Alliance, another strong national training organisation. This has given strength to their delivery models with the organisation delivering training in all aspects of meat (abattoir) processing including animal welfare and HACCP requirements, retail butchery, food processing and laboratory operations.
